In the mid-1990s, Gundel chefs had the privilege of designing the papal dining experience during the millennium celebration of the Pannonhalma Benedictine Archabbey. Under strict Vatican protocols and the Pope’s own modest wishes, the menu embodied purity and restraint — light, thought-out dishes served with utmost elegance.

Three decades later, Executive Chef Róbert Vérten and Corporate Chef András Wolf reinterpret this historic meal for modern guests, respecting its spiritual essence while showcasing today’s refined culinary techniques.

The experience begins with a welcome drink, a glass of Kreinbacher Prestige Brut, before transitioning into a carefully composed selection of two, three, or four courses — all available with wine pairings chosen from Hungary’s finest vineyards.

  • Appetizer: Butter-seared wild mushrooms served with brioche and veal jus – paired with Haraszthy Öreghegy Pinot Noir 2023
  • Soup: Aromatic caraway broth with fresh vegetables and poached quail egg – paired with Váli Kéknyelű 2021
